Dot\u00e9e d\u2019une colonne qu\u2019ils ma\u00eetrisent avec une grande expertise, ils peuvent produire des rhums l\u00e9gers ou lourds. 1919 est le fruit d\u2019un assemblage de rhums d\u2019\u00e2ges diff\u00e9rents, tous vieillis dans d\u2019ex-f\u00fbts de bourbon ; et cette ann\u00e9e, sa recette est revue, ainsi que son packaging.<\/p>\n<p><\/p>\n<p>Gourmand, il d\u00e9veloppe un beau duo caramel et vanille. Une touche pomme verte\/zeste d\u2019orange lui octroie fraicheur (accentu\u00e9e par un petit quelque chose de m\u00e9dicinal) et fruit\u00e9, tandis qu\u2019une trame plus sombre se remarque, sur des accents empyreumatiques et de fruits \u00e0 coque torr\u00e9fi\u00e9s. Apr\u00e8s un premier vieillissement dans d\u2019ex-f\u00fbts de bourbon en altitude dans son pays d\u2019origine, le rhum passe plusieurs mois dans un f\u00fbt qui avait contenu du Pineau des Charentes, ce qui am\u00e8ne sa dur\u00e9e de maturation \u00e0 plus de 5 ans. Il s\u2019agit d\u2019un f\u00fbt unique.<\/p>\n<p><\/p>\n<p><strong>D\u00e9gustation :<\/strong><br \/>Rondeur et gourmandise marquent le premier contact avec ce rhum. Le couple classique vanille et caramel, bien en place, est rejoint par les fruits \u00e0 coque, les fruits secs et une touche de tabac. L\u2019attaque d\u00e9voile un liquide \u00e0 la fois sec et ample, o\u00f9 le f\u00fbt a un peu plus marqu\u00e9 le rhum, ce qui lui apporte des notes plus sombres et torr\u00e9fi\u00e9es, sans que cela ne le d\u00e9s\u00e9quilibre. La r\u00e9f\u00e9rence pr\u00e9sent\u00e9e ici passe huit ans dans des f\u00fbts de ch\u00eane am\u00e9ricain et b\u00e9n\u00e9ficie du climat particulier du nord du pays durant son \u00e9levage. Si ce n\u2019est l\u2019eau pour la r\u00e9duction alcoolique, rien n\u2019est ajout\u00e9\u00a0: pas de sucre, pas de caramel colorant et pas d\u2019ar\u00f4mes. \u00c0 noter que la marque propose \u00e9galement un 12 ans au pourcentage alcoolique sup\u00e9rieur.<br \/>On le d\u00e9couvre expressif et intense. D\u2019une identit\u00e9 marqu\u00e9e, il d\u00e9roule une trame \u00ab\u00a0sucr\u00e9e\u00a0\u00bb men\u00e9e par des ar\u00f4mes \u00e9pic\u00e9s et fruit\u00e9s. La fraicheur, elle, vient des notes v\u00e9g\u00e9tales et d\u2019agrumes. Raisins imbib\u00e9s d\u2019alcool et touche de vanille compl\u00e8tent son profil. Plus sec que pr\u00e9vu, il nous donne des notes de caramel, de cuir tandis que les \u00e9pices demeurent. La marque colombienne nous livre ici la seconde \u00e9dition d\u2019un rhum r\u00e9alis\u00e9 en collaboration avec la distillerie lorraine de whisky Rozelieures. D\u2019abord vieilli 8 ans durant dans des f\u00fbts de ch\u00eane am\u00e9ricain, il connait ensuite une seconde maturation d\u2019un mois dans des barriques qui avaient contenu une liqueur de caf\u00e9 de la maison, pour enfin parfaire son \u00e9levage dans d\u2019ex-f\u00fbts de whisky tourb\u00e9 Rozelieures.<\/p>\n<p><\/p>\n<p>Naturellement, le profil de ce rhum n\u2019est pas si simple et plusieurs trames se rencontrent et se rejoignent. C\u2019est avant tout le rhum en lui-m\u00eame qui domine, sa douceur marqu\u00e9e par des ar\u00f4mes de caramel, de bois\u00e9 l\u00e9ger et d\u2019agrumes. C\u2019est le cas ici avec ce rhum overproof pur jus de canne \u00e0 la fermentation de deux semaines\u00a0; autant de termes que l\u2019on n\u2019associe pas avec la R\u00e9publique Dominicaine. C\u2019est justement cette originalit\u00e9 et son c\u00f4t\u00e9 expressif qui ont s\u00e9duits l\u2019\u00e9quipe de d\u00e9gustation du Rhum Fest Paris.<br \/>Il surprend par son intensit\u00e9 aromatique mais aussi par son profil. Tr\u00e8s fruit\u00e9, il \u00e9voque aussi la tomate, les bonbons et une touche chimique. La concentration en bouche frappe d\u00e8s l\u2019attaque, avant que le rhum se mette \u00e0 \u00e9voluer, tout en gardant sa trame fruit\u00e9e et acidul\u00e9e. Avec cette s\u00e9lection par l\u2019\u00e9quipe Excellence Rhum, il est cependant n\u00e9cessaire de souligner \u00e0 quel point un rhum agricole de la maison Longueteau, issu de canne rouge, qui a repos\u00e9 deux ans apr\u00e8s distillation et qui a connu une r\u00e9duction mesur\u00e9e peut atteindre des sommets.<br \/>Expressif, ce premier contact se fait exotique gr\u00e2ce \u00e0 la mangue et la banane verte mais \u00e9galement floral. Un voile de canne m\u00fbre enrobe l\u2019ensemble pour le rendre encore plus aguicheur. En bouche, la puissance est parfaitement \u00e9quilibr\u00e9e par la texture enrobante et l\u2019impression sucr\u00e9e. L\u2019intensit\u00e9 sous le palais ne d\u00e9\u00e7oit pas et la canne \u00e0 sucre se r\u00e9v\u00e8le dans toute sa gourmandise. Avec du repos, on appr\u00e9cie la typicit\u00e9 du jus de canne et l\u2019ensemble offre une certaine rondeur. Les \u00e9pices prennent une belle place au palais et sont pouss\u00e9es par la relative vivacit\u00e9 du rhum. Ce 5 ans est n\u00e9 \u00e0 la distillerie Engenhos do Norte (moulins du nord), qui produit plusieurs marques, dont 970 et Branca que l\u2019on peut trouver en France.<br \/>Au programme des r\u00e9jouissances, d\u2019abord un voile vanill\u00e9, qui laisse progressivement passer les fruits du verger. Sa nature agricole se devine, pas sur le jus blanc et sa verdeur mais sur son \u00e9volution au contact du bois et, entre autres, les \u00e9pices qu\u2019il apporte. Les 46 % donnent un petit coup de fouet en bouche, qui, alli\u00e9 \u00e0 une certaine sucrosit\u00e9 fonctionne bien. Aromatiquement, on ne s\u2019\u00e9loigne pas du nez.
